Gloucester-born, Mark has held an illustrious career in some of the South West's finest restaurants, including six years at Sir Christopher Wren's House in Windsor, three years as head chef at the Painswick Hotel in Gloucester and most recently, ten years as head chef at the Old Passage in Gloucester, where he gained two AA Rosettes for the restaurant.

Mark is a champion of local produce and supporting local producers and while the 1919 Restaurant is closed for refurbishment in January, Mark will be out with his team of four chefs meeting suppliers and discovering the ingredients available on their doorstep.

Speaking after his appointment, Mark said "With Nick and Julia's plans for the refurbishment of the restaurant, this is an incredibly exciting time to be joining the team at The Cottage in the Wood and I'm really looking forward to getting stuck in and creating menus that will match the modern and vibrant new 1919 Restaurant. I want to help put The Cottage in the Wood on the map as a real foodie destination, the restaurant will have a relaxed atmosphere and be welcoming to all, focused on local produce and ingredients with amazing flavours."


Set in the magnificent Malvern Hills with panoramic Cotswolds views, this is truly a unique and peaceful hotel where the birds sing, the air is fresh and the views take your breath away.

Local produce is important to the kitchen team, and this all starts in the kitchen garden where vegetables and herbs are grown specifically for kitchen use.  All food is prepared with fresh, quality and where possible, locally sourced ingredients, working together with local suppliers and producers to source the highest quality ingredients for your enjoyment.

1919 is a two AA Rosette award winning restaurant named after the year The Cottage in the Wood started its commercial life as tea rooms.  The Restaurant serves delicious modern British cuisine ranging from light, healthier dishes to more indulgent meals to suit all tastes and appetites, and are influenced by the forest and coast, with the emphasis squarely on fresh, clean flavours.
